Created with inspiration from Steve's brother Ross’s culinary expertise that brings you the rich, finger-lickin' goodness of this famous secret blend of herbs and spices right to your kitchen.

Crafted from a closely-guarded recipe, this seasoning blend boasts no fewer than 20 meticulously selected herbs and spices to deliver the legendary flavour to your homemade fried chicken.

Our seasoning packs are designed to provide you with enough of this delectable blend to coat a generous 4-kilogram pack of chicken.

Ingredients:

 

Chicken legs and thighs (marinated in buttermilk overnight or for a few hours)

Buttermilk (or a buttermilk substitute made by adding one tablespoon of lemon juice or vinegar to one cup of milk)

BFC Coating

Optional: Eggs for an alternative coating

Oven Instructions:

 

Preheat your oven to 190°C for a conventional oven or 170°C for a fan-assisted oven

Line a baking sheet with parchment paper or use a lightly greased baking rack placed on a baking sheet.

Remove the marinated chicken from the buttermilk or egg wash (if using).

Coat each piece of chicken thoroughly with BFC Coating. Make sure the chicken is evenly coated.

Place the coated chicken pieces on the prepared baking sheet or rack.

Bake in the preheated oven for approximately 35-40 minutes, or until the chicken is golden brown and cooked through. The internal temperature of the chicken should reach 74°C.

Air Fryer Instructions:

Preheat your air fryer to 180°C.

Remove the marinated chicken from the buttermilk or egg wash (if using).

Coat each piece of chicken thoroughly with BFC Coating. Make sure the chicken is evenly coated.

Place the coated chicken pieces in the air fryer basket, ensuring they are not overcrowded and have some space between them.

Cook in the air fryer for approximately 20-25 minutes, flipping the chicken halfway through the cooking time, until the chicken is golden brown and reaches an internal temperature of 74°C.

 

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
