The traditional way to serve meatballs is with a rich tomato sauce. Here is the perfect recipe!
Ingredients
3tbsp Olive oil
1 Medium onion, finely diced
4 Garlic cloves, crushed
2 x 400g cans chopped tomatoes
300ml Passata (sieved tomatoes)
125ml red wine
3tbsp Caster sugar
1/2 bunch flat leaf parsley (leaves only)
A few basil leaves for flavour
Preheat the oven to 180C/160C Fan/Gas 7
Drizzle a little oil into a heavy based frying pan and brown the meatballs all over then set aside.
In the same pan heat the remaining olive oil and add the crushed garlic cloves. Sizzle for 1 minute.
Stir in the chopped tomatoes, passata, red wine (if using), caster sugar and parsley, bring to the boil then immediately cover and turn down to a very gentle simmer.
Let the covered sauce gently blip away for about 30 minutes then pour into a flameproof casserole or other covered ovenproof dish.
Add the meatballs and make sure they are well coated in the sauce then cover the dish and cook in the preheated over for around an hour until the meatballs are cooked through.
You can spice this sauce up a bit by adding a finely choped red chilli when you're frying the garlic.
Serve on freshly cooked spaghetti with a generous shaving of good quality Grana Padano cheese.
Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
