You will also need:

25g butter

1 small bunch rosemary and thyme

1 lemon, quartered

Remove the chicken from the fridge and all packaging one hour before you want to cook it to bring it up to room temperature. 

Preheat your oven to 190c conventional/170c fan/Gas 5

Stuff the chicken cavity with one lemon, quartered, and a small bunch of rosemary and thyme.  

Rub the chicken all over wth 25g butter at room temperature.  It is better to use your hands for this to ensure even coverage so get stuck in.  

Season with salt and pepper.

Place in the oven and leave undisturbed for 2 hours (based on a 2-2.3 kg bird). 

Please don't be tempted to baste the bird, it is completely unecessary.  

Remember to allow the bird to rest for 15-20 minutes after you remove it from the oven, this is crucial and will ensure a deliciously tender finish to the roast.

Enjoy with all the usual trimmings! 

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
