The Daube of Beef looks like fillet and tastes like heaven! Also known as the Jewish Fillet or the Glasgow Fillet, this cut is ideal for either slow cooking or for pan searing. An economical steak, it is dense and slightly sweet tasting and comes from the area between the shoulders and underneath the blade and chuck ensuring a delicious tender cut. The Beef Daube makes the perfect accompaniment to a salad and sautéed potatoes cooked in goose fat.
