To BBQ  - Double wrap each rack in aluminium foil. ... Place the ribs on the grill over direct medium heat and cook for 1 hour, with the lid closed, occasionally turning the packets over for even cooking, making sure not to pierce the foil. 

Oven Cook - Wrap the ribs in aluminium foil. Bake uncovered in a pre-heated oven at 160c degrees celsius fan for 90 minutes.  When done, remove from oven and check for caramelisation.  If you want to give them a bit more simply baste in the juices and pop back in the oven at 190c for 20 minutes more.  

Keep refrigerated and use within 3 days of purchase. If freezing freeze on day of receipt.
