Our Meats

Water Buffalo 

Farmed between our family farm at Clentrie, Auchtertool, and rented pastures at Raith Estate, Kirkcaldy.  Our Buffalo are kept, as you would cattle.  Grass fed throughout Spring Summer and Autumn then housed on straw courts over the worst of the winter, where they are fed on homemade hay and silage.  

Buffalo have a real natural immunity, we do not use routine antibiotics and follow traditional farming methods giving them the best life we can.  
Our Buffalo meats comes highly recommended, with several celebrity endorsements, most notably from Gordon Ramsay when our business and animals featured on his popular F-Word show.

In addition, we've been awarded 2 stars for our Buffalo Steak Pie PLUS 1 star for our Buffalo Tuscan Burgers at the Great Taste Awards 2018!

The attractions to the water buffalo are countless, they produce a very healthy meat that is lower in cholesterol, higher in mineral content and less than half the fat content of conventional lean beef. 
Perhaps the reason for their excellent flavour is that they are the same animals they were thousands of years ago as they have not been subject to many of the modern intensive farming practices.

If you like good beef you’ll love buffalo, many people describe it as how beef used to taste!

 

Native Gold Scotch Beef 

Steve currently buys beef on a weekly basis from our local auction market, using his knowledge picks out the best native bred beef cattle to supply our shops and wholesale business.  

The Scotch Beef assurance means all animals we select are Grass Fed and slowly matured.  Born, reared and slaughtered in Scotland and spent their entire life on QMS Scotch Assured holdings. 

We are commited to selecting Native bred cattle, Aberdeen Angus, Beef Short Horn or Hereford, which are all breeds renowned for their superior eating quality. 

We have recently added selected native breeds to re introduce our own beef herd, including Belted Galloway & Beef Short horn.  

 

Pork 

We have two main suppliers of pork, our neighbour Puddledub Pork, run by Steves aunt and uncle on the family farm at Clentrie.  The bacon and gammon Puddledub produce is described by many as the best in Scotland

We also supply quality assured Pork from Robertsons of Ardrossan.  

 

Scotch Lamb & Mutton 

We work purely with Scotch Lamb supplied either by the Munro family in Ladybank, Fife or from our own expanding flock of Jacob sheep here on the farm which we established in late 2019, and look forward to being able to supply from 2020 onwards straight from our farm.
In the event that neither of us have any stock ready we buy from other local farmers at market, generally Texel or Suffolk crosses.  Scotch lamb and mutton is 100% grass fed and amongst the most flavoursome in the world. 

Venison & Game 

Venison is a healthy, tasty, versatile meat.  We source Farmed Venison from Downfield of Ladybank, and wild Scottish venison from Highland Game.  

Game birds are sourced from local estates when in season.

 

Poultry & Eggs 

Our Free-range hen and duck eggs are predominately supplied by Blyths of Windygates in Fife.  

Our own hens and ducks that we keep at Boglily Steading cannot keep up demand, so it is only a small percentage of what we sell, but you will find them from time to time in our shop alongside the occasional Emu egg. 

We have two trusted suppliers of Barn reared chicken, where the chickens are reared with bales, natural daylight and plenty of space. 

Red Tractor, barn reared Scottish chicken from Frank Bird. 

Chicken Fillets we source directly from Vriesekoop of The Netherlands.  

Like all small butchers in Scotland, sourcing a supply of free-range Scottish chickens is a challenge.  We are endeavouring to find a suitable partner to work with.
